Ingredients for soup:- 250g (8 7/8 oz) Silvo Split Peas
- 1 ¼ L (5 1/3 cups) Water
- 1 Pork Chop (approx. 150gr (5 ¼ oz))
- 1 Piece of Streaky Pork (approx. 100gr (3 ½ oz))
- 1 Small, Finely Chopped Onion
- 1 Leek Cut into Rings
- 100g (3 ½ oz) Sliced Celery
- 100g (3 ½ oz) Chopped Carrots
- 1 Potato Peeled and Cubed
- 1 Rookworst (smoked sausage) (250g or 8-9 oz))
- Cubed celery root - optional
- Salt, Pepper
- 1tbsp (15mL) Celery Leaf
|
Directions:Wash the split peas and with the water, pork chop and bacon bring to a boil. With a skimmer take the foam off the top. With the lid on the pan cook the soup for 45 minutes, stirring from time to time. Take the chop out of the soup, remove the bone and cut the meat into small pieces. Add all the vegetables, the potatoes, the rookworst, and the meat to the soup and let it cook for 30 minutes on low heat. Stir from time to time. Take the rookworst and bacon out of the soup and cut into pieces. Add salt, pepper and celery leaf to taste and let it cook for a couple minutes. Serve the rookworst and bacon pieces with mustard, and baked bread cubes or croutons or whole meal bread and herb butter with the soup.

Tips and Variations:Cooked rookworst and bacon can be added back to the soup or served separately. Other varieties of pork can be used; the original Dutch recipe calls for a (smoked) pork hog. | Silvo Recipe Index |
