Silvo Spice Mix for Kale

Ingredients:

1.5 kg (about 3 1/2 lb.) potatoes
1.2 kg (about 3 lb.) fresh kale (or  dried kale, jar kale or tin kale)
200 mL (7/8 cup) milk
30-40g (a bit less than 1/4 cup) butter or margarine
1 package Silvo Spice Mix for Kale

Directions:

  1. Peel the potatoes, cut in equal sized pieces and wash.

  2. Wash the fresh kale and chop finely, discarding the hardest part of the core. Put the potatoes and kale in a pan with water. Bring to a boil on high heat with a lid on the pan.

  3. Put the heat on low and cook for approx. 25 minutes until vegetables are soft.

  4. Meanwhile bring the milk to a boil.

  5. Drain the potatoes and kale and mash together, add the boiled milk and stir everything until it is smooth.

  6. Add the mix and the butter or margarine and stir.

  7. Serve hot.

Tips & Variations:

Do not add salt and pepper as it is already in the spice mix.

Dried, tinned, or jars of kale may be substituted for fresh kale - for cooking instructions see the products.

Traditionally boerenkool is served with smoked sausage, but tastes also delicious with meatballs, or pork chops.
