Dutch Apple Pie

made with Koopmans Selfrising Flour

Preparation Time: approx. 40 min. Baking time 75 min.

Ingredients:

300gr. (10 5/8 oz.) Koopmans Zelfrijzend Bakmeel

200gr. (7 1/8 oz.) Butter or Margarine (Room Temperature)

160gr. (5 5/8 oz.) Yellow Sugar

A Pinch of Salt

1 Egg

1kg. (2 ¼ lbs.) Apples

50gr. (1 ¾ oz.) Sugar (Optional)

2 or 3 tsp (10 or 15mL) Cinnamon

75gr. (2 5/8 oz.) Raisins

2 tbsp (30mL) Custard or Breadcrumbs

Directions:

  • Preheat the oven at:  Electric: 180°C (355°F) Convection: 165°C (330°F)

  • Grease the spring form pan.

  • Put the butter or margarine, and sugar into a mixing bowl and mix together until it is smooth.

  • Add Koopmans Zelfrijzend Bakmeel, salt and 2/3 of the slightly beaten egg.

  • Mix this all together with a hand mixer and dough hooks or knead  by hand until the dough clings together.

  • Set the dough aside in the fridge.

  • Peel, core, and cube the apples.

  • Mix the apple cubes with the sugar (optional), cinnamon, and raisins.

  • Roll out ¾ of the paste on a floured counter then put into the bottom and against the sides of the spring form pan.

  • Sprinkle 2 tbsp (30mL) of Custard or Breadcrumbs over the bottom of the pie or mix it through the apple mixture.

  • Fill the piecrust with the apple mixture.

  • Use the last bit of the dough to make 1/2” strips.

  • Crisscross the strips over the top of the pie.

  • Brush the top of the pie with the leftover egg.

  • Bake the pie just below the middle of the oven in approx. 75 minutes or until golden brown.

  • Let the pie cool down in the spring form pan.

With Koopmans Zelfrijzend Bakmeel you are also able to make delicious 'Zandkoekjes' ( resemble short bread cookies)
