Atlanta Mix for Farmers Cake

Preparation Time: approx. 15 minutes

Baking Time: approx. 60 minutes

Ingredients:

1 package Atlanta Boeren cake mix

200g (7 1/8 oz.) butter or margarine, softened

4 eggs

Directions:

  1. Preheat the oven. Electric: 160°C (320°F) Convection: 145°C (295°F)

  2. Beat the butter until it is smooth.

  3. Add the eggs and cake mix and mix with mixer for 4 minutes.

  4. Pour the batter into a greased pan.

  5. Bake in centre of oven for 55-65 minutes.

  6. After baking  prick the centre with a toothpick; if it comes out clean and dry the cake is done.

  7. Let the cake cool down before taking it out of the pan.

Tips and Varieties:

If the oven is too warm the cake will bake into a peak.

If the cake does not come out of the pan, put it upside down for a couple minutes then take the cake out.

Cup Cakes:

Same ingredients as for Cake. Preheat the oven.

Electric: 210°C (410°F) Convection  175°C (345°F)

Mix the batter the same way as you would the cake, except mix it for 3 minutes not 4.

Put the batter into cup cake cups and bake for 14 minutes.

After letting the cup cakes cool down, top the cup cakes with powder sugar, jam or colored sprinkles.
