Cut the butter into small pieces in a large bowl while mixing it
with all the ingredients, except the Rice Flour and Almonds.

Knead with a cold hand
until a ball forms.

Dust
the figurines on the board with Rice Flour.

Push some dough on the
whole board but especially in the Figurines. Cut with a sharp knife
the extra dough off. [Have the knife going flat over the board; you
will get thin cookies]

Push some shaved almonds
into the dough.

Put the board up side
down. If the cookies do not fall out, knock on the board or make a
start with a point of a knife.

Keep
on going till all the dough is gone, making sure you sprinkle every
time a little Rice Flour on the board. Store in the fridge for at
least half an hour.

Arrange the cookies on a
greased cookie sheet.

Bake in the middle at 350
F/180°C for 15 minutes until light brown & done.

Cool on cooling rack.
