Speculaas Cookies Made with a Speculaas board

(Speculaas Koekjes)

 

Ingredients:    

  • 150 Gram(5 1/4 oz) All purpose Flour 

  • 150 Gram(5 1/4 oz) Koopmans Zelfrijzend Bakmeel #94897

  • 180 Gram(6 1/3 oz) Butter or Margarine

  • 150 Gram(5 1/4 oz) Brown Sugar   

  •  20 Gram(2/3 oz) Silvo Speculaas Kruiden #94842 

  • ¼ tsp (1.25mL) Salt    

  • 50 Gram(1 3/4 oz) shaved Almonds

  • 50 – 100 Gram(1 3/4 - 3 1/2 oz) Rice Flour      

  • 1 Speculaas figurine board  #503612 or #50362
     

Directions:                       

  • Cut the butter into small pieces in a large bowl while mixing it with all the ingredients, except the Rice Flour and Almonds.

  • Knead with a cold hand until a ball forms.

  • Dust the figurines on the board with Rice Flour.

  • Push some dough on the whole board but especially in the Figurines. Cut with a sharp knife the extra dough off. [Have the knife going flat over the board; you will get thin cookies]

  • Push some shaved almonds into the dough.

  • Put the board up side down. If the cookies do not fall out, knock on the board or make a start with a point of a knife.

  • Keep on going till all the dough is gone, making sure you sprinkle every time a little Rice Flour on the board. Store in the fridge for at least half an hour.

  • Arrange the cookies on a greased cookie sheet.

  • Bake in the middle at 350 F/180°C  for 15 minutes until light brown & done.

  • Cool on cooling rack.

Tips and Variations:

Great in the wintertime & with Sinterklaas.

Do not over bake the cookies: the cookies become very hard
